Winemaking Pre-pressing maceration. Vinified in stainless steel vats of 5,000 LT of total capacity and new French oak barrels of 225 liters. Using the “open spout” method taking advantage of the so-called “drop wine” and first crushing. Fermentation was carried out at temperatures close to 18oC in the case of stainless steel tanks. During alcoholic fermentation, lees are deposited and the batonage process is applied in barrels. Fine lees work in post fermentation |
